You Will Need: 2 1/2 lb bone-in-chicken (6 to 8 pieces) with or without skin or 2 lb boneless skinless chicken breast halves and 1 egg to moisten. Preheat oven to 400 degrees F. Coat 15x10x1-inch metal baking pan with 2 Tbsp oil, 1 egg to moisten. To Prepare: 1. Moisten: Moisten chicken with lightly beaten egg, shake off excess. Empty coating mixture onto plate. 2. Coat: Coat chicken on all sides by pressing firmly into mixture. Discard any remaining mixture. 3. Bake: Bake at 400 degrees F in oiled baking pan until cooked through. Bone-In: Bake 20 minutes. Turn and bake 20 minutes more. Total: 40 minutes. Boneless: Bake 20 minutes. Do not turn. No Oil/No Egg Directions: Moisten chicken with water only. Coat as directed. Place on ungreased pan. Bake at 400 degrees F for 40 minutes (bone-in) or 20 minutes (boneless) or until cooked through. Do not cover or turn.
